Mochi Mango Bread

3 c. mochiko flour
t t. vanilla
1 c. Bisquick
6 eggs, unbeaten
4 t. baking soda
8 c. diced mango, ripe and firm
4 t. pumpkin pie spice
1 c. raisins
1 t. salt
1 c. flaked coconut
3 c. sugar
1 c. walnuts or macadamia nuts, chopped
1 1/2 c. salad oil

Mix together mochiko flour, Bisquick, baking soda, pumpkin pie spice, salt and sugar.  Mix oil and vanilla together and add to the dry ingredients, then add unbeaten eggs.  Mix well until the ingredients are blended.  Add diced mango and mix lightly to coat.  Add raisins, flaked coconut, and nuts.  Let sit for 5-10 minutes before putting in the oven.  Pour into greased pans and bake at 350 degrees.  If using large loaf pans (8 1/1 x 4 1/2"), bake 1 hour.  If using small loaf pans (7 x 3 1/"), bake 45 minutes.  Makes 4 large loaves or 9 small loaves.
