Pork Adobo

2 lbs. pork butt or pork shoulder
2 T. garlic, minced
5 bay leaves
4 T. vinegar
1/2/ c. soy sauce
1 T whole pepper corns
1 c. water
salt to tastes

Cut pork into 1" cubes.  Combine the pork, soy sauce, and garlic.  Marinade for at least 1 hour.  Heat pot.  Put pork in pan and cook for a few minutes.  Add water, pepper corns and bay leaves.  Bring to a boil.  Reduce heat to low and simmer for 40 minutes.  Put in the vinegar and simmer for an additional 12 minutes.  Add salt to taste.  Serve hot.
